Valentine tea

It’s almost Valentine’s Day! And most of us are still stuck at home. So why not celebrate the day of love with a Valentine tea?

I don’t know if I’ve mentioned this before, but I always have a planned menu for various parties or events… and I almost always end up not making at least one of the items I had planned to. This time, I had planned to make beet hummus sandwiches in the shape of hearts — heart beet sandwiches, if you will — but I was running late, so I made heart-shaped pimento cheese sandwiches instead, with Wegman’s pimento cheese.

I also didn’t frost the mini cupcakes. But they were still delicious!

Also as usual, we could have used another savory item among the various sweets. So you may want to add a ham and cheese or something to balance everything out. But the chocolate chip scones were heavenly, and everything else was delicious, too.

Valentine tea menu (also great for Galentine’s Day!)

Chocolate chip scones (use this recipe, but omit the pecans and use chocolate chips or chunks instead of dried cherries. I used Ghiradelli dark chocolate chips). Serve with whipped cream and strawberry jam.

Red velvet mini cupcakes (I used this recipe. You should cut it in half unless you want a LOT of mini cupcakes)

Heart-shaped sandwiches (Use a cookie cutter to cut the bread, then spread pimiento cheese or beet hummus on them)

Tomato and mozzarella on heart skewers (affiliate link)

Chocolate-covered strawberries (I will do a post about these on my Instagram, and there are many recipes online, but I melted 1 cup of Ghiradelli dark chocolate chips and a tablespoon of coconut oil in the microwave, 30 seconds at a time, then dipped dry, room temperature strawberries in it and sprinkled some heart-shaped sprinkles on top. Place them on a cookie sheet lined with wax paper or parchment paper and put it in the fridge for about 30 minutes to harden the chocolate)
