I love watermelon, but every time I buy it I get a little overwhelmed by how much of it there is. So, I figured I’d turn some of it into a margarita. Of course.
You don’t need a ton of limes for this. I actually put too much lime juice in the first time I attempted to put this together, and it was not good.
It also requires some watermelon. Obviously.
If you don’t have a juicer, you can liquify the watermelon in a blender. No big deal. And if you DO have a juicer and you still have a lot of watermelon left over, I recommend juicing it with a handful of mint leaves. Watermelon-mint juice is to die for. But these margaritas are pretty nice, too. Plus they have the added bonus of being alcoholic. Hooray for tequila!
Watermelon margarita (Makes one)
1 cup cold watermelon chunks
1 ounce (2 tablespoons) silver/white tequila
1/2 ounce (1 tablespoon) lime juice
3 teaspoons powdered sugar or agave syrup
Lots of ice
Lime wedge and salt for the rim of the glass, if desired
Process the watermelon chunks in a juicer, blender or food processor to liquify. Stir 1/2 cup of the watermelon juice, the tequila, lime juice and 2 teaspoons of powdered sugar or agave syrup together in a measuring cup or glass. Taste and add more watermelon juice or sweetener, if necessary.
If using salt on the rim of the glass, rub a lime wedge around the rim first, then dip in salt or salt/sugar mixture. Add lots of ice to the glass and pour drink over it. Serve immediately.
