Happy Derby Day, y’all! Sadly, I am looking for houses in California right now and not at home whipping up a bunch of Derby-themed foods and drinks for you, but I do have a couple things you could put together in time for the run for the roses.
Sweet tea mint julep sorbet (shown above) – it’s sweet, boozy and not very hard to make.
Kentucky hot browns – This is Bobby Flay’s version, so it’s a little involved. Totally delicious, though.
Fruit salad with mint sugar – my go-to for any party. It’s easy and delicious.
Bourbon-glazed grilled chicken – easy, fast, tasty
Bourbon-peach individual pies – Use refrigerated pie dough to save time)
Bourbon balls are also an obvious choice, but they’re messy and have to be refrigerated at various points, so you probably can’t get them done in time for the Derby. Maybe next weekend?
Of course, Cinco de Mayo is tomorrow, so if you’d rather focus on fiesta food, I’d recommend throwing some chicken and salsa in the crockpot for chicken tacos (or chicken burritos or quesadillas), blending up some restaurant-style salsa or charred tomatillo salsa, chopping up some vegetables for guacamole salad and squeezing some lime juice for a pitcher of margaritas (just make sure you have extra on hand!). This Mexican wedding cake is a really easy and delicious option for dessert.
These healthy chicken enchiladas are also pretty low-maintenance.
If you’re looking for something a little different, albeit a bit more involved, try some beer-braised carnitas nachos, southwestern pulled beef or this shredded pork and beans thing my family calls chalupas.
