The day before we were going to Hilary and Matt’s, I got a text message:
Do you like broccoli?
The answer, if you haven’t guessed, is yes.
This is another recipe from the Deen brothers’ cookbook. I liked it, but I found it a bit salty so I am going to eliminate the salt from the recipe. Feel free to add 1/2 a teaspoon or so if you’d like.
In addition to being good and healthy, this recipe has the added bonus of being easy. You just have to steam the broccoli and toss it in this garlicky dressing. That’s it.
Steamed broccoli with garlic (adapted from The Deen Bros. Take it Easy)
Serves 4
2 tablespoons olive oil
1 1/2 teaspoons red wine vinegar
1 clove of garlic, minced
1/2 teaspoon freshly ground black pepper
1 pound broccoli, cut into bite-size florets
Steam broccoli in a steamer basket over a large pot of boiling water until tender, 5-7 minutes.
While the broccoli is cooking, whisk the other ingredients (and 1/2 teaspoon salt, if desired) together in a small bowl to make the dressing.
Transfer broccoli to a serving bowl. Pour the dressing over the top and toss to combine.
